A BENTO café boasting Sushi, Korean and Japanese food could be set to open its doors in Colchester.
Kokoro has applied to set up its stall in the former Sharps site, next to Superdrug, in the High Street.
Plans submitted to Colchester Council show there will be a seating area built at the front of the café’s interior.
Chilled displays with sushi will also be placed on one side while a counter is located towards the middle of the venue and a kitchen and service area to the rear.
The applicant describes itself as a “well-respected and established brand offering Sushi, Korean and Japanese food” with “many successful sites around the UK”.
Such sites include Reading, Oxford, Leeds and Uxbridge.
A planning report reads: “The development proposals involve internal and external works to facilitate the change of use of the property to form a Kokoro sushi and bento café/takeaway.
“The principal alterations are internal and include the subdivision of the existing ground floor retail unit to form a servery/retail area, kitchen, dry store and store room.
“These internal alterations are considered to have no potential to affect the character and appearance of the Conservation Area or the setting of the World Heritage Site.”
Colchester Council has the final say.
