COLCHESTER foodies will be able to enjoy perfect desserts and pastries when a new business opens its doors in the city centre. 

Bella’s Patisserie will be serving up continental delicacies when it opens in Sir Isaac's Walk later this month. 

The artisan patisserie has been set up by 27-year-old mum of two Isabela Maria.

Originally from Romania, Mrs Maria moved to Colchester with her husband, Florin, in 2014, and previously worked in hospitality and healthcare.

But while she was pregnant with her two daughters, Carolina and Cleopatra, Mrs Maria discovered baking was her true passion.

She hopes to begin her new venture in the next fortnight.

She said: “We were thinking about opening the business a year after I had my second daughter.

“I was a stay-at-home mum and I was always baking cakes, but they’re not normal cakes – they’re called entremets.”

A French creation, the entremet is composed of layers of cake, mousse, and ganache, and is more complex than a typical cake.

Many of the other cakes Mrs Maris will sell will be of Romanian origin, not something which can be found easily in Colchester.

“I would hope people will be open to [the cakes] and try them at least – if you are very traditional, you might not like it, but if you were to try something new, I bet you will like it," she said. 

“My husband has a sweet tooth, so it doesn’t matter how sweet it is."

The premises in Sir Isaac’s Walk, though small, will be a good starting point for Bella’s Patisserie, which is now fully furnished with the necessary appliances for the business to get up and running.

She added: “We try and do everything from scratch – when people come in, they will see our vision.

“At home, I have a very small kitchen; here, at least I have a medium-sized kitchen.

“I’m aiming for people who want to try something new – if they don’t like it, then at least they have tried it.”
