THE director of a famous bagel business has said its new store in Colchester is coming in "the next couple of weeks”.

Brick Lane Bagel Co., founded by father and son duo Stuart and Elliott Hearne, is set to open a new store in Colchester High Street.

Speaking to The Gazette, franchise director Elliott said: “My dad came up with the name while I was at uni and I thought it was brilliant but he never acted on it.

“It was only when I watched a film called The Founder about the creation of McDonalds, I thought we should do it.

“My dad put the money in to get us started, he really is amazing and I have tried to make him the face of the company.”

Excitement began to build after coming soon signs appeared in the windows of the empty unit opposite Three Wise Monkeys.

The space had previously been used as the flagship showroom for Blackstone, which produces handmade and bespoke kitchen products.

Elliott said: “We are always looking to grow, we have basically outgrown our bakery in Brick Lane and if we can get a bakery outside the M25 we can move up the country.

“We have shops coming in Shenfield, Camden, Greenwich and of course Colchester.

“If Colchester was closer to where we started, we would’ve been there earlier.

“It should open in the next couple of weeks.”

Elliott also teased what people can expect from the new store.

He said: “We have a good range of fillings which are cheap and cheerful.

“We have seven or eight main bagels which are slightly more expensive but you can tell the difference in quality.

“I think it will be another really good hub for the community.

“We want people to enjoy it and want to come back, really have a good experience.

“The locals and regulars are the bread and butter of every single franchise.

“All our staff are amazing and friendly and we try to talk to all customers from all backgrounds.

“We want to put a smile on people’s faces.

“We do try and keep out prices relatively low too, inflation is a killer but we know what it is like.”

The new Brick Lane Bagel Co. store is set to come to Colchester’s High Street soon.
