A FAMOUS bakery business has announced the date it is opening its new store in Colchester... and there is not long to wait.

Brick Lane Bagel Co., founded by father and son duo Stuart and Elliott Hearne, is set to open a new store in Colchester High Street.

The space towards the end of the road had previously been used as the flagship showroom for Blackstone, which produces handmade and bespoke kitchen products.

The news of the top-tier acquisition started to circulate after ‘coming soon’ signs appeared in the windows of a currently empty unit opposite Three Wise Monkeys.

Franchise director Elliott previously revealed in early April he was hoping to see the Colchester store open "in a couple of weeks", however, there were some delays.

It has now been confirmed the new Brick Lane Bagel Co. shop will open this Saturday, May 6, meaning revellers enjoying the coronation can treat themselves to a tasty delight from the new shop.

On the opening, Elliot said: "Sorry for the delays.

"It’s always exciting once the signs go up.

"Hopefully, we can create a nice family atmosphere for everyone in the community." 

The shop boasts a sleek black design with yellow signs outside.

Inside it has brick-designed walls along with some newspaper ceilings and classic photos on the walls.

The menu has also been put up, showing off some of the breakfast bagels on offer.

Choices range from the ‘Big Daddy’, including sausage, bacon, egg and latke for £6.50 as well as regular sausage or bacon bagels for £4 or an egg and cheese for £3.50.

There are also ‘simpler’ options, such as jam and butter for £2.25 or marmite or Nutella for £2.50.

Speaking to the Gazette previously, Elliott teased what people can expect from the new store.

He said: “We have a good range of fillings which are cheap and cheerful.

“We have seven or eight main bagels which are slightly more expensive but you can tell the difference in quality.

“I think it will be another really good hub for the community.

“We want people to enjoy it and want to come back, really have a good experience.

“The locals and regulars are the bread and butter of every single franchise.

“All our staff are amazing and friendly and we try to talk to all customers from all backgrounds.

“We want to put a smile on people’s faces.

“We do try and keep our prices relatively low too, inflation is a killer but we know what it is like.”
