A NEW restaurant is coming to Colchester High Street after plans for a burger chain were withdrawn.
The Sushi Co. is set to open in the former site of Optical Revolution, sandwiched between Toni & Guy and Nicholas Jewellers.
Plans for changes to be made to the premises were given the green light by Colchester Council last December.
Smacks Hamburgers had applied to the council for listed building consent to place signs outside the restaurant.
However, the future of the site was left up in the air after the plans were withdrawn in May.
Now, the building is being renovated ahead of the opening of a new sushi restaurant, run by The Sushi Co.
Renovation work can already be seen to be taking place at the site in the High Street.
Colchester Council portfolio holder for economy, Alison Jay said: “From our point of view, it is really good to see some positive signs of inward investment.
“It is a sign things are moving in the right direction in Colchester and it is somewhere businesses feel they want to be and want to invest in.
“We are always working to make Colchester an attractive place to open new businesses, and I have seen the city centre buzzing - especially on Fridays and weekends it is very busy.
“I think something like this opening can only be a good thing, and hopefully it puts some residents’ minds at rest.
“The city centre is changing, and we are losing some retail, but gaining other positive things, and lots of different businesses are interested in coming here.”
The restaurant will be the brand's second in Essex, with one site already in Brentwood.
Outside of the county the chain also boasts restaurants all over London.
The Sushi Co. says it has a “dedicated team” which works with a “small hand-picked and highly accredited group of suppliers” who deliver “vibrant, eye-catching and flavoursome ingredients” to its kitchens.
The business follows “authentic Japanese processes to prepare handmade Minutes Fresh Sushi”.
It offers mainstream and popular sushi dishes such as Sashimi, Nigiri, Uramaki and more.
The company website reveals the new site will be opening in Colchester in December.
