Oysters could be used to put Maldon on the map.
Maldon District Council chairman John Archer has revealed plans to start an oyster fair in the town now that there are reasonable stocks in the River Blackwater.
Maldon Oyster Company has recently spent thousands of pounds on leasing, clearing and laying historic beds in the river, in a bid to bring back the days of oyster fishing to the town once renowned for the sought after shellfish.
Such a festival has never been run in Maldon before, but it has been an annual event in Colchester for centuries.
Mr Archer said: "I do want to get it going, I am very keen the oysters go back to the Roman times.
"It will be started hopefully this year and I am planning on it being an annual event."
