The 17-year-old who works at the Parson's Barn Pub, Shoebury, served up some mouth-watering steamed seabass, green beans, with white wine, vanilla and creamy garlic sauce.
The Essex Chef of the Future 2002 event at South East Essex College, Southend, was the last of four area heats held in Essex from which Jamie and three other young hopefulls will go on to battle it out in the final.
Last night's heat at the college in Carnarvon Road was organised by Essex County Council's tourism team which has held other heats in Colchester, Chelmsford and Harlow.
The team of judges include Mark Baumann of Baumann's Brasserie in Coggeshall.
The final takes place in September.
